Abby J's Strawberry and Asparagus Salad

Ingredients:
2 cups spinach or spring mix, 2 cups strawberries, sliced in half, 1 large spring onion, chopped, 2 cups asparagus , cut into 1 inch pieces, 1/2 cup broccoli sprouts, 2 tbsp. sliced almonds, 1 oz. feta cheese, crumbled, juice from 1/2 lemon, 2 tbsp. olive oil, 2 tbsp. honey, salt and freshly ground pepper, to taste!
Directions:
Bring a large pot of water and a tsp. of salt to a boil, over medium heat. Set aside a bowl of iced water. Add the asparagus to the boiling water and cook for 2 to 3 minutes. Remove the asparagus and immediately add it to the bowl of ice water. Let it sit for about 30 seconds and then let it drain in a colander while you're preparing the rest of the salad. This step is called "shocking" and it keeps the asparagus form overcooking while brightening the color. In a large bowl combine the cooled asparagus, spinach, strawberries, onion, broccoli, sprouts, almonds, and feta cheese. In a small bowl whisk together the lemon juice, olive oil, honey, salt, and pepper. Pour dressing over salad and toss lightly to coat!
