Abby J's Spicy Sausage Bites

Preheat oven to 400 degrees. Makes 3 dozen
Preparation-3 pastry sheets, 1lb. Carroll's award winning medium vidalia sausage links cooked and cut into 3/4 inch slices, 1 1/2 cup Abby J's Jalapeño Mustard Gourmet Sauce, 1 1/2 cup Pepper Jack or Cheddar Cheese shredded, 2 eggs, 2 tablespoons Pecan Ridge Truffle Oil & Caraway seed. Roll out pastry on lightly floured board and use a pastry brush to apply the mustard sauce. Sprinkle 1/2 cup cheese on top of each pastry sheet. Cut into 2 inch squares and place sausage on top of each one. Pull together the corners and then beat the eggs with the truffle oil and brush each bite with the egg wash and top each one with 3 Caraway seeds. Cook for 20 minutes or until golden brown. Enjoy~
