Abby J's Mexican Egg & Chorizo Casserole topped with Abby J's Bean & Herb Salsa

Makes 6 Servings


1 cup chorizo cooked, 6 eggs, 1/2 cup half & half, 1/2 cup diced jalapeños, 1 cup mexican cheese, 1/2 cup diced onions, 1/2 tsp. salt, 1/4 tsp.ground pepper, 1 cup Abby J's bean & Herb Salsa, & 1 cup Sour Cream, 1 Avacodo & 1 Red Jalapeño & 1 Green Jalapeño 

Heat oven to 350 degrees. Spray a 9 X 9 baking with cooking spray. Cook Chorizo, onions and jalapeños on medium heat for 5 minutes, stirring occasionally, until thoroughly cooked; drain. Meanwhile, beat eggs, half & half, cheese, salt & pepper and stir in chorizo, peppers & onions. Bake 25 minutes or until eggs are set in center. Let stand for 10 minutes before serving. Garnish each serving with 2 tablespoons of Abby J's Salsa, 1 tablespoon of Sour Cream, Chives, Jalapeños & Avocados! Enjoy~
