Ingredients: all-purpose flour, chicken, Crisco, eggs, milk, pepper, salt
- 1 whole bird cut into 8 pieces, 1 cup milk, 1 Tb. garlic, 2 large eggs, 1/2 cup milk, 1 cup all purpose flour, 1 Tb. salt, 1 Tb. pepper, 24 oz. Crisco
- Let chicken stay overnight and marinate in 1 cup of milk and 1 tablespoon garlic. Remove the chicken and whisk the eggs with the 1/2 cup milk. I another bowl, whisk the flour with the salt and pepper. Dredge the chicken in the seasoned flour. You can add hot spices in the flour for more flavor. Allow the chicken to dry for 30 minutes.
- In a cast iron skillet, heat the oil to 365 degrees. Add the chicken and fry moderate heat turning occasionally until the chicken is deeply golden brown and an instant thermometer reads 170 degrees. This takes about 25 minutes. Drain the chicken on paper towels and serve immediately.
