Old Fashioned Pumpkin Pie

Ingredients: cardamon, cloves, dark brown sugar, deep pie crust, eggs, ginger, ground nutmeg, heavy cream, lemon zest, pumpkin puree, salt, white sugar

1 deep pie crust, 2 cups pumpkin puree 1 1/2 cups heavy cream, 1/4 cup sugar, 2 eggs plus the yolk of a third egg, 2 teaspoons ground cardamom, 2 teaspoons ground cinnamon, 1 teaspoon ground ginger, 1/2 teaspoon salt, 1/2 teaspoon lemon zest, 1/4 teaspoon ground nutmeg, and 1/4 ground cloves

Directions:  Preheat oven to 425 degrees. Mix sugars, salt, spices and lemon zest in a large bowl. Beat the eggs and add them to the bowl. Stir in the pumpkin puree. Whisk all together until well incorporated. Pour into pie shell. Bake at 425 degrees for 15 minutes, then reduce heat to 350 degrees and bake for 45 to 50 minutes. Cool on a rack for 2 hours.
