Black-Eyed Pea Salad

2 -15 oz. cans of blackened peas, drained 1/2 cup of spring onions 1 stalk of celery chopped, 1 red bell pepper chopped, 1/2 cup red onions, diced, 1/2 cup cilantro leaves, rough chopped 1/4 cup canola oil, 1/4 cup white wine vinegar, 1/2 teaspoon brown sugar, 1/4 teaspoon salt, 1/4 teaspoon pepper
Drain the peas, Dice the onions, peppers and celery and rough chop the cilantro. Mix together the peas with the onions, pepper, celery, and cilantro in a bowl. In a small bowl whisk the vinegar, oil, brown sugar, salt and pepper. Pour over the black-eyed pea/onions/pepper/celery & cilantro, mix well to combine.
Serve right away or refrigerate until ready to serve!
