Abby J's Chili Paste~10 Servings

Ingredients: 1 pound chopped long red cayenne peppers. 2 cloves garlic chopped. 2 shallots chopped. 1/4 cup olive oil plus more if needed. 1/2 teaspoon cumin. Salt & pepper to taste.
Instructions: Add peppers, garlic, and shallots to a food processor and process until finely chopped. Transfer to a pot and add olive oil. Heat to low and cook 20 minutes, stirring occasionally. Add a bit more of olive oil if needed. Do not burn the mixture. Cool and transfer to a food processor. Process until smooth. Transfer to a jar and refrigerate. Use one spoonful at a time to soups, sandwiches, entrees, etc.
