Abby J's Bowtie Lasagna

Ingredients: 1 Box bow tie pasta, 1 lb. TeXga Farms Beef, 1 lb. Italian Sausage, 1 24 0z. Bertoli Roasted Garlic Pasta Sauce or Fresh Tomato Sauce, 1-14oz. diced tomatoes, 1/2 cup water, 1 vidalia onion diced, 3 cloves garlic, minced, 2 teaspoons dried basil, 1 teaspoon fennel seeds, 1teaspoon dried rosemary, 1/4 salt, 4 tablespoons of fresh chopped parsley, 8 oz. ricotta cheese, 8 oz. cottage cheese, 1 egg, 2 cups Laura Lynn Mozzarella cheese, you can use 1 cup of Laura Lynn Italian cheese and 1 cup of Mozzarella and 3/4 cup grated Parmesan cheese.
Preheat oven to 375 degrees. In a lodge cast iron skillet, cook sausage, ground beef, onion and garlic over medium heat until well browned. Stir in diced tomatoes, tomato sauce and water. Season with salt, basil, fennel seeds, Italian seasoning, pepper, 2 tablespoons parsley and rosemary. Simmer, covered, for about 1 hour, stirring occasionally.
Bring a large pot of lightly salted water to a boil. Cook pasta 14 min. Drain pasta, and rinse with cold water. In a mixing bowl, combine ricotta cheese, cottage cheese with egg, remaining parsley. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9 X 13 inch baking dish. Spread layer of bow tie to cover. Spread with one half of the cheese mixture. Top with a third of the mozzarella cheese and sprinkle 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Bake in preheated oven for 45 minutes. Cool at least 15 minutes before serving.
