Abby J’s Pumpkin Bread

Ingredients: cake flour, cinnamon, cloves and salt, eggs, nutmeg, oil, pumpkin, sugar

4 eggs, 4 cups sugar, 3 1/2 cups all purpose flour, 2 cups pumpkin puree, 1 cup oil, 2 teaspoons baking soda, 1 1/2 teaspoons nutmeg, 1 teaspoon cinnamon, 1 teaspoon salt, 1/2 teaspoon cloves, 1/4 teaspoon ginger. Preheat oven to 350 degrees. Grease and flour three 7 X 3 loaf pans. You can also make muffins or use one large loaf with this recipe. In a large bowl, mix together pumpkin puree, eggs, oil, water, and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Bake for 50 minutes in the preheated oven. Loaves are done when a toothpick inserted in the center comes out clean.
